Make sure your container has drainage holes and over these place gravel or broken crocks of terracotta. Terracotta is traditionally used because the shards have a little curve so they cover a drainage hole and still keep a little oxygen space, and because terracotta absorbs moisture storing a little extra for the soil mixture. Put a thin layer of grit of fine gravel and a sprinkling of horticultural charcoal granules (if available) over the terracotta. They help keep the soil sweet for herbs which have reached their largest size pot. Then use a good moisture retentive soil mixture. There are good peat – based mixtures available from garden centers usually with a wetting agent in them. This makes it easier to water the pots when they dry out, but my preference is still for a soil-based mixture. Peat becomes very light when it dries out and pots can be blown over in strong winds. Also, while sterilized soil has all the weed seeds and disease spores steamed out theoretically making it better, to me it feels dusty and lifeless. There is something about a home made with good rich compost, and lots of oxygen incorporated as you mix it like a giant Christmas cake in the wheelbarrow, that is worth putting up with the extra weeding. The herbs themselves discourage many of the disease so I take my chances with live soil.

PREPARING ROOTS FOR USE

For an infusion, or decoction, pieces of any convenient size can be used; just bear in mind that the smaller the pieces, the more quickly will be desired principles be extracted to permeate the liquid. When purchasing dried roots, they are usually sold either powdered or in small, pea-sized pieces, very occasionally whole. Fresh ginger is the main exception and its soft texture is easy to grate and slice. For recipes requiring a powder they can be broken up as much as possible in a plastic bag with a rolling pin or hammer and can then is ground with a pestle and mortar. Very small amounts can be powdered in a domestic electric grinder but I have ruined one motor in an attempt to powder enough rhubarb roots to use as a hair lightener.

When a flower contains both the female stigmas and male stamens together, this is botanically called a perfect flower. The saffron crocus (crocus sativa) is one example and it will survive the British climate. From the mid-fourteenth century to the beginning of the twentieth century, it was grown commercially around the town of Saffron Walden in Essex. But the bulb needs a long, hot summer to produce the flowers with their desirable stigmas. The purple flowers open in the autumn and each contains three long, red stigmas next to the orange anthers. The stigmas protrude from the flower and this distinguishes it from the poisonous ‘autumn crocus’ or naked ladies’ which are also called meadow saffron. Grow the saffron bulb in a rich, well-drained soil in a sheltered spot. Pick the saffron stigmas as soon as the flower opens.
