Lavender is very strongly flavored and only tiny amounts are used, sprinkled sparingly as you might use pepper. It is found in some Herbs deprovence mixtures which are prepared for casseroles and stews. This mixture usually includes dried thyme, rosemary, marjoram, savory, oregano, basil, tarragon and a small amount of lavender which gives a light, spicy perfume to the traditional savory herbs.
