The flowers of pungent – leaved herbs often have a milder version of the leaves’ flavor. Nasturtium, mustard, mint, salad rocket and chive flowers come into this category while sage and thyme and rosemary flowers have a delicate hint of their leaf scent. If rosemary flowers are pounded into sugar and left for a few days, they will impart a light spiciness that goes well with fruit desserts like fools and creams. Calendula, too, has a mild flavor while pinks, roses and sweet violets radiate a little of the perfume for which each is famous. Others, like borage, pansies, daisy petals and mallows, are used more for their unusual color and texture than their flavor.
