Mix all marinade ingredients together then add pork, sliced into good sized cubes. Cover, and allow marinating for at least 6 hours. To prepare for cooking – thread the pork onto skewers, attractively arranged between sliced tomato, onion, peppers and the occasional bay leaf. Cook for 20 minutes turning frequently. Melt butter in small pan, add the onions and allow softening over a gentle heat. Do not allow the butter to color. Add crushed berries and keep over a low heat or place in a dish in a very low oven. When skewers are cooked, brush liberally with this sauce this before serving. Roughly chop rhubarb, rinse and then put in a heavy saucepan with the sugar and lightly crushed cardamom pods. Cook very slowly allowing the fruit to give up its own juice and to ensure a good infusion of flavors. Allow to cool, and then remove the cardamom pods. Spoon alternate layers of yogurt and fruit into tall glasses and decorate with sprig of mint.
