For anyone on a salt-free diet, dill seed, which is rich in mineral salts and small age (wild celery), are useful substitutes. Several herb seeds are excellent aids to digestion. The ‘four warming seeds’ form a special calmative mixture which reduces flatulence. The mixture includes equal parts of aniseed, caraway, coriander and fennel. An old English custom of serving a small dish of caraway seeds with roast apples is still practiced at Trinity College, Cambridge and some London Livery dinners. Dill, too, is an excellent aid to digestion, especially for babies and is an important ingredient in gripe water. Dill water is easy to make but ensure everything is properly sterilized and be certain you have the correct seed. Infuse ½ oz (15g) of bruised dill seed in a cup of boiling water for ¼ - ½ hour. Give baby a teaspoon at room temperature when required. For adult indigestion, take a tablespoon when needed.
